Kohlrabi is packed with nutrients, minerals (copper, potassium, manganese, iron, and calcium), fiber, as well as Vitamins A and K – so it packs a nutritional punch. Most people eat it raw (like a radish) with a little salt (if desired). It can be sliced/diced and added to your favorite salad. Each head measures at least 3 inches in diameter.
